What's actually piled onto that sandwich.

What can we actually order?

Sandwiches piled high with pulled pork, brisket, chicken, smoked sausage, or veggie, plus sides like potato salad, mac salad, slaw, baked beans, and mac n cheese. Everything's finished with our homemade KC, Carolina Gold, or Spicy Texas sauce.

How is the food cooked and sauced?

Everything is seasoned and slow cooked, and each sauce is brought to a boil in its own stock pot so it keeps its own flavor and texture. Nothing is rushed and nothing is generic - that's how we get real BBQ, not just grilled meat with sauce poured on top.

Can our slaw be customized?

Yes - our slaw can be made mayo-based, apple slaw style, or however you'd like it done. It's one of the small details we like to get right for every host.

📋 Day-of Service

What to expect once we roll up to your event.

What time do you show up on the day of the event?

We aim to arrive 30-60 minutes before service starts. All our prep work is done before we get there, so once we're on-site it's just greet the host, get set up, and open the window.

What do you need from us for setup?

Really just a level place to park - we come fully self-sufficient otherwise. A slanted lot makes cooking and hot oil unsafe, so a flat spot is the one thing we ask hosts to lock down.

How do you keep the line moving once service starts?

We cook to the back of the line, not the front, which is why we ask hosts to run a slightly shortened menu. With 3-4 people working the window at all times, your sandwich is ready almost the moment you order.

Do you provide plates, napkins, and utensils?

Yes - we provide all cutlery and napkins with every service, so that's one less thing for you to plan around.

👥 Guest Counts & Booking

Sizing the right BBQ setup for your event.

What size events do you handle?

We handle events of all sizes - depending on your guest count and vision, we might recommend pairing with one of our partner trucks so everyone gets fed in time. We'll help figure out the right setup for your headcount before the day of.

Is there a minimum to book you?

We do have a minimum spend based on time on site, food served, guest count, and location, but there's no minimum guest count. Reach out with your event details and we'll walk you through what fits.

How far will you travel for an event?

We'll travel anywhere - if it's outside a major city hub, there may be a travel charge added. Just let us know your location and we'll give it to you straight.

Where the Pig Rig came from, and why we do this.

How did Colorado Pig Rig get started?

The Kriz brothers founded it in Colorado in 2014, blending their two favorite comfort foods - street tacos and Kansas City BBQ - into one concept. What started as a single truck grew into a national brand, and we've been operating trucks since 2016.

What kind of events do you enjoy most?

Private events are our favorite - planning everything out, setting up to impress the host, and watching guests light up over the food. Happy guests making the host look good is the whole goal.

What are you most proud of?

We believe we make the best KC BBQ sauce around, and pairing the Kriz Brothers' apple slaw recipe with our own sauce on a pulled pork sandwich is still a personal favorite. Holding onto that tradition of genuinely great food is what we're proudest of.

What do guests notice most about your food?

Guests tell us they notice the care and passion behind every plate, and that they get real value with every meal. We know you have plenty of choices for where to eat, so we don't take it lightly when you choose us.
