What Our Setup Needs
We're rolling more toward trailers these days — they take a touch more room to back in than a traditional truck, but they're built to be more reliable on event day. Either way, we come fully self-sufficient and just need a level place to park, since hills make hot oil and steady cooking unsafe. Give us clear, flat access and we'll handle the rest.

Quick Answers Before You Request a Quote
What can we actually order?
Sandwiches piled high with pulled pork, brisket, chicken, smoked sausage, or veggie, plus sides like potato salad, mac salad, slaw, baked beans, and mac n cheese. Everything's finished with our homemade KC, Carolina Gold, or Spicy Texas sauce.
How is the food cooked and sauced?
Everything is seasoned and slow cooked, and each sauce is brought to a boil in its own stock pot so it keeps its own flavor and texture. Nothing is rushed and nothing is generic - that's how we get real BBQ, not just grilled meat with sauce poured on top.
Can our slaw be customized?
Yes - our slaw can be made mayo-based, apple slaw style, or however you'd like it done. It's one of the small details we like to get right for every host.
What time do you show up on the day of the event?
We aim to arrive 30-60 minutes before service starts. All our prep work is done before we get there, so once we're on-site it's just greet the host, get set up, and open the window.
